Kappo Suguru Brings Joo Chiat Shophouse Intimacy to Singapore’s Seasonal Omakase Map

Kappo Culture in a Joo Chiat Shophouse

Kappo Suguru has settled into a cosy shophouse at 192 Joo Chiat Road, bringing the team behind Suguru Home Dining into a more intimate restaurant setting. The space is centred around a compact counter, giving diners a front-row view of the chefs as they work through traditional kappo techniques. Kappo, in Japanese culinary tradition, is about cutting and cooking in front of the guest — a format that sits between the formality of kaiseki and the conviviality of an izakaya. At Kappo Suguru, that translates into a meal that feels refined but never stiff. The venue operates as two concepts throughout the week, with Kappo Suguru from Sunday to Tuesday and Suguru Sushiya from Wednesday to Saturday, creating a small-scale Japanese dining destination in the East. For diners who want a chef’s table experience without the marble-and-glass grandeur of a hotel dining room, the shophouse setting delivers a different kind of luxury: neighbourhood intimacy.

An 11-Course Seasonal Progression

Kappo Suguru serves seasonal omakase menus starting from S$180++, with the 11-course seasonal menu showcasing a contemporary interpretation of traditional Japanese cuisine. The progression moves through chilled somen with tomato granita and botan ebi, cold chawanmushi with scallops, seasonal sashimi, hassun, soup, and a signature stuffed chicken wing packed with scallops, wild shrimp, iburigakko and shiso. Later courses include steamed longtooth grouper in a sour and spicy sauce, seasonal vegetable tempura and a generous donabe rice cooked with kinki fish, shirasu, charred corn and ikura. The main course offers a choice between Kansai-style grilled unagi and tallow-aged A5 wagyu, followed by a seasonal dessert. The structure is classic omakase — a gradual build from delicate to rich — but the flavours are not museum pieces. They are seasonal, produce-led and designed to be eaten in the moment.

Counter Seating and Relaxed Formality

With only counter seating, Kappo Suguru is best suited to smaller gatherings and leisurely meals rather than large groups, adding to its intimate character. Despite the refined techniques and premium ingredients, the atmosphere remains relaxed and approachable, without the formality often associated with high-end Japanese omakase. That combination — close-up chef interaction, seasonal cooking and a laid-back setting — makes the Joo Chiat space a distinctive addition to the neighbourhood’s growing dining scene. In 2026, as Singapore’s chef’s table format expands beyond the CBD and into shophouse neighbourhoods, Kappo Suguru shows that intimacy does not require a hidden door or a waitlist measured in years. Sometimes it just requires a counter, a seasonal menu and a chef willing to cook in front of you.
